One watermelon makes two short cakes (or a tall one if you do things differently). Cut melon in half, cut the top flat, cut off side rind.
Cover cake-melon with thawed, but still chilly, whipped cream. Be careful about water and whipped cream mixing at the edge of the plate, it looks yucky when that happens. I like to let everything chill when it’s done to avoid melting.
I used this brand of cream because everyone in my house is lactose intolerant. It “contains milk and soy”, but milk is not expressly mentioned in the ingredients. We got it at Trader Joe’s. I survived.
Here’s a the nutrition facts. Lists a bunch of ingredients and then reads in bold: Contains milk and soy. I assume that means it was processed on a plant near milk and soy. (Lactose can make certain people very sick. Take what I say about the milk and soy processing plant with a grain of salt; I am one of those people on the internet you were warned not to believe. At least I digested my serving fine.)
Use a spatula.
